The Best Chicken Noodle Soup Recipe
Gotta love cold and flu season. I woke up yesterday with a nasty cold that’s been making its way through each of us for the past couple of weeks. It’s nothing too severe; just a sore throat and runny nose. Still, nobody likes being sick, and what mom has time for that?
Moms don’t usually get to rest when they’re sick. I spent the first half of my day locked in my room working on a rush job while my husband was out working his side business. Thank the good Lord for my two oldest daughters who can take care of the little ones for a bit while Mama gets some work done.
When my husband came home, he asked if I wanted some chicken noodle soup, and of course I said yes. We have a few favorite chicken soup recipes, but when he said “soup” I instantly started craving spicy Sicilian chicken noodle soup from Carrabba’s. We found this recipe a few years ago (although, I cannot find the source anymore), and we always go back to it. It’s an amazing cold-weather soup and feels amazing on a sore throat. It’s not too spicy, and our kids (even the little ones, ages 3 and 5) love it. And I don’t know if it was the soup or if it was all my head, but I felt better after eating it. Maybe it’s true what they say about chicken soup being an immune booster!
